Wide, soft rice noodles (ho fun) are wok-tossed at scorching heat with thinly sliced beef marinated in soy and cornstarch, then finished with bean sprouts, scallions, yellow chives, and a splash of dark and light soy. The result is the smoky, almost charred fragrance the Cantonese call wok hei — the breath of the wok.
